PURPOSE: Under the general guidance and supervision of the General Manager, and within the limits of established Group polices, procedures and Food and Beverage Manual, F&BM oversees and directs all aspects of the food and beverage operation. RELATIONSHIPS - Reports directly to the General Manager - Interacts with individuals outside the hotel including but not limited to clients, suppliers, government officials, competitors and other members of the local community. - Coordinates functions and activities with other department heads as appropriate. DUTIES AND RESPONSIBILITIES - Supervises the function of all food and beverage employees, outlets, sales and costs to ensure maximum departmental profit is achieved. - Controls and analyses, on an on-going basis, in order to optimize the following: a. Quality levels of product and service. b. Guest satisfaction c. Merchandising and marketing d. Operation costs e. Sanitation and cleanliness (hygiene) - Coordinates and supervises the preparation, presentation and service of food and beverage products to ensure highest quality at all times. - Establishes and maintains effective employee relations. - Conducts such functions as interviewing, hiring, employee orientation, performance appraisal, coaching, counselling, and dismissal if necessary to ensure appropriate staffing and productivity. - Develops and implements formal training plans for F&B department personnel. - Prepare the Food & Beverage Department budget. - To comply with Group values and principles and delegate them to F&B team members. - To ensure the confidentiality of information related either to the hotel or clients. - Interacts with individuals outside the Hotel including Food & Beverage Merchants, prospective customers, suppliers and media. - Reports faulty equipment as well as health and safety hazards to the General Manager and makes sure these are documented accordingly for necessary actions. - To perform other related duties as may be assigned by the General Manager. - Co-ordinates constant supervision of Safety and Hygiene standards at all times. REQUIREMENTS: - Demonstrate knowledge of food and beverage operation obtained through College degree (hotel school, university or equivalent experience); and 3 years related experience in hotel business - Proven management abilities and demonstrate knowledge of: o Budgeting and forecasting o Departmental profit and loss analysis. o Effective verbal and written communication skills. • Excellent communication skills, written and oral with proficiency in English, German will be a great plus |
